How do I know it is the switch and not the motor or heater?

The behavior tells you. If you have to hold, wiggle, or press the switch a certain way to keep the machine running, the switch is the problem. If the unit cuts out when the switch is bumped or the cord is moved near it, same answer. A failed motor is consistent: it does not run regardless of what you do to the switch. Intermittent behavior that responds to physical pressure on the switch itself points to worn contacts.

Why do extractor switches fail?

Current and cycles. An extractor pulls serious amperage across the vacuum motor, the pump, and the heating element, and the switch makes and breaks that entire load every time it is flipped.
